8 boneless pork loin steaks to BBQ tomorrow late afternoon.
About 125g, 4/5 ounces each.
How would you marinade them?

for pork loin I do a chinese 5 spice based dry rub with a little oil, soy sauce, brown sugar, garlic, ginger, onion powder with a little rice wine vinegar.

How about a spicy jerk marinade?

Put a bunch of spring onions, 3 or 4 scotch bonnet peppers, a pinch of salt, 2 tablespoons of honey, 4 tablespoons of soy sauce, a tablespoon of vinegar or lime juice, a tablespoon of olive oil and two tablespoons of jerk seasoning (Dunn's River is good) into a food processor and whizz up until you get a sludge. Stab your pork chops all over with a knife, put in a shallow dish and cover with the marinade, making sure the chops are throughly coated. Cover with clingflim and leave for 6-8 hours or overnight then barbecue.

This one is good as a sauce or a marinade - store cupboard ingredients

1 clove of garlic, crushed
3 tablespoons dry cider or wine
6 tablespoons soy sauce
1 teaspoon tomato puree
1 teaspoon mustard powder
1 tablespoon soft brown sugar
2 tablespoons honey
Tabasco
Black pepper

And a jerk marinade very similar to Iggy's, but using spices instead of a bought seasoning - so it probably ends up exactly the same
(I use this a lot, good with belly pork strips)

1 medium onion, roughly chopped
1 hot chilli, roughly chopped
3 tablespoons soy sauce
1 tablespoon oil
1 tablespoon cider or wine vinegar
2 teaspoons fresh thyme leaves
2 teaspoons sugar
1 teaspoon salt
1 teaspoon ground allspice
1 teaspoon ground black pepper
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
dash of Tabasco

I just whizz the onion and chilli in the food processor, add everything else and whizz again. You'd need to chop the onion & chilli finer if mixing by hand, obv.

As they were, BBQ'd yesterday I improvised - soy sauce, Lea and Perrins, crushed garlic, lemon juice, chipotle sauce and balsamic - left them in it overnight.
Oh, and a few splashes of Tabasco
It was sort of:
Ooh, that's not good
Ooh, that's a bit better
Ooh, that's not bad actually

I don't use recipies for marinades. I just raid the fridge, spice rack and cupboard for condiments and can usually come up with something.

There are alot of basics that go into many of them and just a few special ingredients needed to go in a specific direction.
