I have a Toshiba rdxv48dt which is becoming temperamental. I have bought an rdxv60 to replace it. If I take out the HDD from the old machine, is there any way that I can copy the data to my PC, and what software would I need to view and process it?
I can't answer your question but I have the same model and the HDD is nearly full and would be intersted if it could be replaced with a larger HDD (and copying the old contents).
The model appears to already have the capability to record from the hard disc to a DVD blank.
If so simply record in DVD-Video format to a re-writeable DVD blank. Copy the resulting .vob files from the VIDEO_TS folder on to a PC from it's DVD drive. Use free software like TSmuxerGUI to join the .vob files into a single transport stream mpeg2 file. After that you can use these files on virtually anything.

DVD recorders tend to have at least some of the Operating Software stored on the Hard Disk (like a PC). To fit a larger disk you need to be able to transfer the software to a properly prepared and formatted hard disk. This is unlike many pvrs that hold the OS in NVram, in this case all you have to do is stick in a new drive and the box will set it up.
