How do you Like your Meat?

Of course I'm referring to how well you like you steak cooked. My preference is well done, because it's less chewy and it puts my mind at ease that I'm not going to get food poisoning from what is effectively raw meat. I always assumed the majority of people also like theirs well done, but now I reckon I'm in the minority.

I would add a poll but don't know how, so would you opt for your beef rare / medium / well done / vegetarian / other?

i don't eat steak..when i used to eat it it had to be well done..i hated bloody ones the thought of it makes me feel sick

Black and blue. Black and crispy on the outside but red in the middle. It's less chewy when it's rare in my opinion.

I love steak with pink still in it, be it venison, beef, or lamb. Obviously pork and chicken has to be cooked thoroughly.

Growing up my mother would never have let us eat any meat unless it was cooked to death (overdone), but my husband introduced me to the deliciousness that is rare (but not bloody) steak. If you go to my mom's house and they're having a barbecue, if you ask for a rare steak, she'll go outside and tell her husband to make sure it's at least medium; she just can't wrap her head around the idea that it's okay to eat beef and certain other meats with some pink still in them. Beef mince is always cooked thoroughly for me, however; if I order a burger I don't want to see any pink.

Bib- having it well done makes it chewy.. maybe you are eating the wrong cut of steak? Quality steak melts in your mouth the less you cook it.

Anyway, I always used to have it well done because that's what my mother instilled in me, then once I had it medium...nice. Then I tried it mediumrare....nicer.

So now I ask for it medium rare. I would send it back if it came out more on the medium side but not if it came out on the rarer side.

However, I do not like pink bits in burgers, or pork or chicken.

Being vegetarian I prefer it to not be on my plate at all but rest of family like it very well done certainly would not eat it if it was not cooked through properly.

This has been done to death but saying the more cooked a steak is the less chewy it gets and getting food poisoning if it's not well done is beyond stupid.

I love beef fillet carpaccio best, so like my steaks very rare too. It's only something I have started appreciating relatively recently.

I think for my lot they just prefer the appearance and taste of well cooked meat, it has never been an ambition to eat blood.

I like a my steak to have just a little pink in the middle of it.
I do not like to cut into it and have blood trickle out, I know it still tastes ok but for me personally I find it off putting.
I had a lovely steak out the other evening, it was the first bit of red meat I have had for quite a few weeks.

I'm guessing you're not a QI watcher. I always thought it was blood but it's actually mostly water with a protein called myoglobin, that gives the reddish hue. The more myoglobin, the redder the meat. Mammals commonly contain more myoglobin and are considered ‘red meat,’ while fish and poultry have little to none of this protein and are therefore classified as ‘white meat.’

It's also why red meat turns brown when cooked. The iron atom in each molecule of myoglobin loses an electron and moves from a +2 to a +3 oxidation state.

But black pudding is delish!

You shouldn't get blood in a steak, as all blood is drained from the animal before butchering. The juice is just meat juices, mainly myoglibin which is a protein found in muscle tissue in red meat.

I am one of those who are late in discovering how good medium rare steak taste. It happened when I accidentally ate one that was covered in a thick sauce thinking it was well done. It was so juicy and tender compared with any I had before.

I don't really care what it is blood or something else, to my lot it just doesn't appeal to eat it pink, they like it completely cooked through. We don't say anyone else shouldn't eat it how they like it - hot from the cow if they want just allow others to say they prefer it rather more cooked.

I've always preferred meat that falls off the bone. It stands to reason that this texture is only achieved when it's well-cooked through. I find rare cuts of meat tougher and more rubbery, with a less pleasant texture.

And I have always associated pink, raw flesh with a risk of falling ill. You wouldn't eat raw chicken or eggs, so why raw beef? That's my logic anyway

A well cooked steak won't be 'fall off the bone' soft. It depends on the cut of meat and the density/type of muscle fibres in that cut. A rare steak is far more tender and juicy than a well done one.

Pink doesn't mean raw, once the interior reaches a certain temperate any bacteria will be killed. That's why it's important to rest your steak. However I have no issue in eating raw beef or raw fish and never suffer with food poisoning as a result.
