A few months ago I saw James Martin cook some potatoes but can't remember what they were called.
He peeled a potato and chopped off the top and bottom so it sat flat and pushed a ring over the top to slice off the sides so that the potato looked perfectly flat and round like a cylinder.
He then fried them in an inch of oil turning both sides when brown and finished them off in the oven.
My mum wants the recipe but for the life of me I can't remember what potatoes cooked this way are called. I've googled everything to do with flat round potatoes done in a pan finished off in oven and variants thereof with no results at all. If you said I would know but right now the word just isn't coming to mind. I have a feeling it begins with the letter C but it's not caramelised.
