Got hold of a 4lb corned beef brisket.

Not sure how to cook it. I've narrowed it down to 2 choices:

1. Slow cooker, sat on a bed of veggies & beef stock for about 8 hours.

2. In a foil-sealed roasting pan on a wire rack above some water, having first browned the beef.

Any thoughts?

Have seen it cooked both ways and its' your own choice as both worked well

I even watched it being cooked in a pressure cooker, less time but same result.

The one in the roasting pan appeared the best with the best finish nice brown crust.
