Just discovered this, what a lovely texture and taste.

so far only had it with pasta and chorizo. What fo others do with it?

Very thinly sliced and in a salad or char grilled as anti-pasta.

Sliced thin and stir fried, or chunked up and chargrilled and serve with a whole steamed or fried sea bass/bream with an asian dressing

Salad of fennel and mild onion, both thinly sliced, with peeled orange segments* and black olives.

*or any orangey citrus fruit

It's lovely braized in a little bit of white wine, with a few chopped up shallots and some garlic. Goes well with chicken or lamb.

I make Prue Leith's cassoulet recipe which uses fennel, chicken, Toulouse sausages and tapenade. Fennel and chicory taste delicious when baked in casserole type recipes.

I often have a lunch consisting off about 4 different veg with grated cheese.......I find that when I lightly boil fennel it loses it's flavour

I think I might stick to eating it raw..............I imagine it would be good instead of celery in a waldorf salad........made a note to try that !

aniseed flavour..........which is also in liquorice
