How come schmaltz isn't readily available in supermarkets in this country? Or at least it isn't around here where lard and dripping are. A lot of the supermarkets are selling more skinless cuts of chicken so you'd think there'd be an excess of skin to use up. |

I wouldn't particularly desire it but recently I pulled the skin off two chicken breasts (I only wanted the meat for a recipe), bunged them on an oven tray with another tray on top and popped them in a hot oven for 20/30 mins.

I'm guessing that since there's not much demand for it (not being traditionally used in Britain), it's instead incorporated into other things, such as chicken nuggets, stock cubes and animal feed.
