Do you have any vegan recipies that you make?
Maybe more of a thread for non-vegans who wouldn't usually think of making vegan dishes.
Apart from chips, for me my goto vegan recipies would be Asian and my favourite would be pho.
Usually made with a good beef stock and thinly sliced raw beef it makes an excellent veggie or vegan dish.
It does miss something without the fish sauce but it's so packed with flavour anyway that you can forgive that.
Basically a good veg stock with garlic, ginger, spring onions, thinly sliced raw button mushrooms, rice noodles, soy, tamarind and lots of fresh herbs (coriander, thai basil, parsley).
That's off the top of my head. May have missed some things out but it looks an ok recipe.
There are many variations on it. Loads of different spices and veggies you can add in. Just make sure the condiments are vegan (so fish sauce, oyster sauce and worcestershire sauce are no-nos.). Some have vegan alternatives.
