Jamie Olivers' Hummingbird Cake

I have just made Jamie Olivers version of the Hummingbird cake and it was a disaster.
The cakes are quite dense and heavy, and when I put the cream cheese filling on and then the top cake, the top cake squished all the filling out of the cake

He lost me at a quarter litre of olive oil, sadly. Can't abide the stuff.

I don't like it either, so I used vegetable oil.
But THAT can't be the reason it went wrong, can it ?

Haven't you posted some pretty successful cake achievements on here?
What do you think is the issue from past experience?

I made the Hummingbird cake the day after watching Jamie singing its praises and so I hoped for something out of this world to be honest.

I am not too bad at making a cake or two so I think I know what I'm doing.
What I ended up with was a really dense and extremely sweet (350g sugar ) stodgy cake.

I don't think I will be eating another one in "a bluebell wood on a fallen tree" anytime soon.

P.s..couldn't get the brittle to work,either.

But I don't know what went wrong with this one.
