It's very cannon.
It usually follows a group of residents who head off on a holiday or head off out of Hollyoaks for the week. It's more adult as in dark, has little swearing, violence and some sexual scenes.
The first series saw Steph, Tom and Craig go up Scotland where Nial kidnapped them and killed himself. Mercedes headed over to Ireland and married Mal. Sarah and Zoe slept together (was the beginning of a major SL as it ultimately ended with Sarah's death a year later), Dom met a new stripper girlfriend, the other was just filler SL but featured The Saturdays.
The next one saw Cindy and Tony marry after he found out about Darren and Cindy's plan to fleece him. The McQueen's headed to London as Theresa had a Photoshoot and we met her mother Kathleen McQueen. Hannah, Josh and Rhys went to a festival where we met the boy who came into HO the following year for Hannah's exit. Last story followed Sarah as her girlfriend killed her (even though she planned on killing zoe).
The third one was different, it was set over one night, it followed Jason/Jasmine as he opened up about being a transgender leading to Bart getting stabbed. Mercedes lied to Mal about having HIV in a way to get him back. Mitzeee took Nancy and Theresa to a party and Theresa ended up giving birth and the Costello lads got kidnapped.
The forth series was very cannon. Silas planned on killing Theresa all week but ended up killing Rae instead. Mitzeee and Warren found out about Mercedes and Carl's affair on Riley's stag week, the McQueens went to Ibiza for Mercedes hen where we met her ex and another McQueen cousin. The last SL was a filler at a fitness camp.
The fifth one was popular but I didn't enjoy it as much, it followed Brendan killing people and we found out he was abused, Brendan also found out Walker was a undercover police man. Theresa and Joel where caught up in the drama too. Mitzeee escaped prison after Mercedes framed her and held her and Riley and knife point threatening to stab Mercy if she never told the truth. Last one was the students in Amsterdam - filler.
Last years was the weakest imo. Trevor sent Tony on a mission to deliver a package to a character played by Danny Dyer. Esther's friend turned out to be her donor's girlfriend and tried to kill everyone but only managed to kill Callum (out of mail characters). The last story was filler, Theresa went to a army camp and snogged her cousin.
Hope this helps and gives more of a idea of what it's like.
They are in iTunes if you want to watch them, I would recommend watching the first 5 as they where very good.
