Am i lucky to be alive eating chicken like this

Lol.....but genuine question coming up.

For many years i have taken frozen chicken breast fillets out of the freezer and cooked them in the microwave on high for around 10-12 minutes. This results in red hot chicken from the outside and into the middle, very succulent and soft, absolutely perfect.

Ouch i just looked at my microwave cookbook that came with the oven more closer and....those timings are for RAW chicken. Also one is supposed to set it on medium heat not the full Nuke level that i use lol. Further reading of the booklet refers to when cooking chicken one must DEFROST it first!

I certainly haven't ever experienced food poisoning. Bearing in mind i haven't ever had any stomach upsets since i was a child am i ok to carry on cooking the chicken the way i do currently?

In the booklet and thousands of places elsewhere it says chicken must be thoroughly defrosted before cooking, however does that simply mean that if one chooses to defrost make sure it is 100% done so?, but if you cook it from frozen and so long as it is not pink etc and hot right through to the centre one would be ok?

There is generally no need to defrost chicken before cooking, although not sure I would cook it in a microwave personally. You can tell if chicken is cooked by the colour, so I'd say it's been properly cooked.

Once got some chicken from a take-away. We were tucking into it in the car on the way home and suddenly found ourselves chomping onto frozen meat
Which is a rather worse scenario. Both of us till alive and kicking though.

Yes, absolutely. If it's not pink and is piping hot all the way through, it's fine to eat.

Frozen chicken breast is ok cooked from frozen, its chicken on the bone or a whole chicken

I'm surprised you're getting a decent texture on the outside but I guess microwaves are different and as long as it's cooked through properly then you should be fine.

When I cook or defrost a frozen chicken breast in the microwave I put it in a microwaveable bowl and cover it in water/stock.
That keeps it very moist.
