Few questions about meat freezing and defrosting

1) To defrost, do I just take it out of the freezer and put it in the fridge and just wait until its defrosted?

2) How do I tell if the meat has fully defrosted? I don't want to cook the meat while its still a bit frozen because I heard this would cause bacteria to grow.

3) Is there any difference between buying fresh meat and freezing it, and buying meat from the frozen section of supermarkets and freezing it? In terms of taste and being healthy.

1 yes you can do that or leave it at room temperature and cook as soon as it is defrosted (covered of course don't want to feed any insects)
2 look and feel, depends what cut you have really
3 as long as meat hasn't been previously frozen no difference at all I would imagine. Unless you are talking about chicken when frozen chicken often has added water.

Ready frozen meat would usually be lower quality but the freezing process would be quicker as they have factories to do it in.
That's why you get frozen products in individual portions instead of all being stuck together.

You can get a 1kg bag of frozen chicken for about £5. It'll have 6 or so breasts in.
You can get a 1kg pack of fresh chicken breasts for about £5 and it'll have 3 breasts in. They will be bigger and probably a slightly better quality. You can then freeze them.

Upto you which you prefer.

I've never had much success freezing fresh meat myself - I think that becouse a domestic freezer takes a long time to freeze that means large ice crystals form in the meat which on defrost gives a sort of 'mushy' texture. Still I know others swear by it so maybe its me or my freezer!
I would tend to cook any bulk bought fresh meat and then freeze it.

Never had a problem myself but I do put the freezer on fast freeze couple of hours before putting meat into it and then I make sure it has space around it (a whole drawer if necessary) so it freezes quite quickly.
