refreezing chicken once cooked?

Hi, sorry if this has been done to death but I wanted to know if it is safe to defrost fresh chicken breast in the microwave, cook a curry then freeze the leftovers for another day?
I have done this lots of times with chilli con carne but I assumed beef was safer than chicken.
Many thanks
I'll be cooking in one hour and the chicken is defrosted now sitting in the fridge at 3degrees.😊

I agree
it is ok to defrost the chicken
then make a cooked meal with the chicken
once cold you can then freeze the cooked chicken meal

Yes, it's absolutely fine to refreeze any meat once its been cooked. It's refreezing raw meat that's previously been defrosted that's a problem.

Having had food poisoning twice from chicken, I now only defrost in the fridge the day before, and whilst it takes a bit of planning I've not had any issues since.

Really don't trust chicken production in this country sadly, so would be careful how you prepare it. I never reheat chicken now either. Might be being overly cautious but food poisoning sucks!

Cheaper than a Weight Watchers course though
