Never tried them.
There's a farm shop nearby that sells parsnips made for giants.
They're incredible and as you peel them the fragrance is fantastic.
I don't get that from my supermarket parsnips even though we buy those also.
If they don't last long they're still fine for something like spicy parsnip soup.

The varieties they sell in supermarkets are too sweet for me. I like them to have a slightly earthy taste, not a very sugary one.

I only bought fresh parsnips for the first time a couple of years ago and didn't realise how nice they smell when peeled and how naturally sweet they are. Moreso than bog standard carrots.

I only really use them at Christmas though so buy frozen honey glazed.

I often see honey glazed parsnips in the freezer section, but parsnips are plenty sweet enough for me

We par boil fresh parsnips & then freeze them.
Much cheaper than buying frozen.

Fresh out of the ground so they still taste earthy. Bought ones are far too sweet!

The only way I like parsnips is slow cooked in a stew or casserole. Can't stand them roasted.

I've come to the conclusion that unless you have a large family to feed, it's far cheaper and even healthier to buy vegetables frozen. So many people will only buy "fresh" vegetables, yet inevitably keep them until they're limp and way past their best. At least with frozen, you need only take what you need for each meal and there's never any waste.

Can you freeze raw potatoes? I wonder how many tons are thrown away each year after they've sprouted to the extent that they look like a bag of spaghetti.

Yes I agree, frozen is much easier to regulate the amounts you need and store, no wastage and they're fresher too as they seem to be frozen quite soon after picking in many cases.
