sweet potato chips
any tips on how to make them so that they're not just soggy sweet potato sticks? I've tried deep frying, shallow frying and oven roasting them, no joy whatsoever. I've tried coating them in oil, olive oil, goose fat, lightly spraying them and dry baking them, nothing works

Oven is best. Are you spacing them out on the baking tray so that they're not touching? Are you cooking anything else at the same time?

They're still very soft inside. |

If you have an Asian or Caribbean shop nearby see if they have the white variety. They are much less sweet and (in my limited experience!) cook much firmer than the orange variety. I intend trying yams and cassava at some time too.

Harvesters offer them as an alternative accompaniment. Very nice. Worth trying some there for ideas, I think.

I love the ones from Gourmet Burger Kitchen - crisp on the outside and soft inside but I just can't seem to make them at home. If anyone has any tips, I would also be very grateful

Quite by chance I heard about this on good old Radio 4. Apparently if you thinly coat the chips with cornflour that gives a crispy outside and soft in side. Worth a shot?

Last time I made them I double cooked them in the deep fryer as that how i've seen them done on tv shows.
The oil has to be fresh. I can get away with using used oil for normal chips, even if they're not as crispy as when using fresh oil, but with sweet potato it doesn't like it so has to be fresh. They don't get as crisp as normal chips and also I found if I cooked them to be more golden than usual it did help a little. or try this for oven baked http://www.foodiewithfamily.com/2014...-potato-fries/ |

I'm going to try the cornflour tip - thanks for that.
And why didn't I think of asking at GBK? I think I shall definitely have to go soon. |
