Here is a recipe that I made for Mr B and me. It was lovely:
One Pot Chicken Chasseur

1 tsp Olive Oil
25g Butter
Chicken
1 chopped Onion
2 Crushed Garlic Cloves
200g button mushrooms (I use Tesco tinned mushrooms finely chopped 'cos Mr B doesn't like mushrooms)
225ml Red Wine
2 tbsp tomato puree
2 Thyme sprigs (I used a sprinkling of dried herbs)
500ml chicken stock

the method says to fry the chicken and set aside then fry the onion and then the garlic and mushrooms. Add other ingredients, and the chicken and simmer for 1 hour. Remove the chicken and boil the sauce up to reduce it.
Obviously you can't do that in a slow cooker so you could try the "bung-it" method instead. But use less liquid. In fact with the wine and the juice from the tinned mushrooms, you prolly won't need any water.

That's what's in our slow cooker right now.

Chicken fillets

2/3 cup apple sauce
2/3 cup barbecue sauce
2 tablespoons brown sugar
1 tablespoon chili powder
1/2 teaspoon ground pepper

Mix it up, pour over the chicken.

I once did

chicken thighs.
Tin tomatoes.
Onion, sliced.
Red pepper, chopped.
Tin chickpeas.
Paprika.
Oregano.

Browned chicken thighs.
Browned onions and peppers.
Lobbed them in the slow cooker with the other ingredients.
Cooked it for 8 hours (you could probably get away with 6 hours).
