I only ever make a cheese sauce with single cream with chopped up bits of cheese (any cheese I fancy) thrown in which slowly melt, you have to keep stirring and get the consistency right, too much cheese will be claggy. I stopped using the roux method years ago.
However on previous lasagnes I used to mix a combination of full fat greek yoghurt, an egg and cheese, mix throughly and pour over the top. I liked it because lasagne is very rich and the sauce had a slight tang to it from the yoghurt which lightened the dish. My favourite combination is edam (yes), strong cheddar, ricotta and cambazola or such like, poured over gnocci. If you leave out the blue cheese and put a little mustard in, makes a lovely cauliflower cheese. |

if you make a cheese sauce with yoghurt it would probably be more of a cheese dip
