Random question but if you have a contract that is in someone else's name (business contract) can the account holder get access to text messages of the phone holder via the bill? X

Do you mean the phone numbers the messages were sent to?
They can't get access to the actual messages but they would be able to see the numbers you are sending to yes.
The only way to get around this is to use a third party messaging app.
(the person you are sending to would obviously have to have the app too so not as universal as SMS).

Thanks for that, yeah I understand that they would see the number I just wasn't sure if they could access the messages, I have whatsapp so I guess that would be better? X

I believe WhatsApp use end-to-end encryption, so in theory nobody else should be able to intercept the messages
