gazpacho Help

I'm thinking of making this for the warmer days but have never done this before. What tomato juice do you use to make it.

You could use a passata and thin it down with stock or water if need be.

Tesco used to so a nice sofrito passata but i've not seen it in a while. Also ASDA used to do a nice extra special one with onions and garlic - again I think it's been discontinued sadly.

So pretty much any of the passatas available will probably do.

Unless you can get a very, very decent Spanish Fritada then I would not use juice at all. This is a good basic recipe:

Although you won't get the freshness. Could do a mix though.

I find it makes it too gloopy, I was taught how to make it in Spain and they always used fresh tomatoes.

Aye but fresh Spanish tomatoes are going to be a hell of a lot better than what many can get over here.

If the tomatoes aren't up to much flavourwise, I would add some sundried tomatoes, and maybe a spoonful of the oil from the jar.

Can't you just use a Tomato juice like Del Monte/Libbys or something?

Can't help with tomato ingredients but I can highly recommend the Honestly Healthy white gazpacho recipe - it's sooooo lovely and very good for you! (Sorry, not helpful I know!)
