Jam Tarts like my mum used to make 101

I'm sure this is as basic as cooking can get, but does anyone have a basic pastry recipe for use in jam tarts like the ones my mum would turn out in the 60s and 70s?

Pastry, roll out, cut out crinkly circles, press into tin, add a spoonful of strawberry jam and bake.

So how do I make that pastry, please?

You need sweet shortcrust pastry. It's very easy to make.

Excellent! Thank you! I shall tackle a batch tomorrow! (Using my Mum's old rolling pin and cutter from the 60s (and they weren't new then!))

I did a quick google and some recipes used self-raising flour instead of plain. Would that make much difference?

I would always use plain flour for shortcrust. Self-raising is supposed to make the pastry lighter, but it also puffs up more when baking, which you don't really want with tart cases. I'd stick with plain! A good tip for shortcrust pastry is not to over-knead it. You want to knead it until it just comes together and then no more.

aww jam tarts are nice, but lemon curd ones are nicer , yes homemade ..but i like the Tesco ones Lol

Be quiet all of you I can not even taste them at the moment. I will have to make some Lemon curd ones when I get taste back.
