Whilst it can't be taken as canon anymore, one of the books (not sure if it was Tales of the Bounty Hunters or Tales from Jabba's Palace) had a Bobba Fett story which had him escape the Sarlac soon after Luke, Han etc... got away. So he might not necessarily be dead....
I can go one better than that. Here's the proof...

I thought that the Obi-Wan Kenobi spin off film is most likely after the Han Solo film

I'm still not sure about the Star Wars spin off films as I wasn't a fan of Rogue One but then the bits I enjoyed the most from it involved the characters from the original trilogy especially the end of the film!

I've found that Rogue One is a marmite film which fans either love or hate but most seem to agree it's above the prequels!

The problem with Boba Fett is that Lucas screwed up the character by making him a Maori clone of Temuera Morrison, and removing all the mystique that made the guy cool in the first place.
Yes, with a terrible actor child to boot.

The problem with the spin-off's is that they cannot stray too far from the Saga in terms of timeframe or characters for fear of losing any essence of being Star Wars. A film set 100 years before the SW story and involving none of the characters would essentially just be a sci-fi fantasy. It might be interesting to see the Jedi in their heyday but I don't think a film like that would have a wide appeal. So the writers of these films have a fairly limited scope. Once you've done the Han Solo origin story, a Kenobi film and maybe a Yoda or Fett film (not sure either of those would work very well TBH) you've pretty much exhausted the potential characters you can use and will be into sequel territory. Solo has potential for a few i.e. how Han & Chewie met, how Han got the Falcon (although I'm guessing with Lando involved in the upcoming film they're covering that) etc... Otherwise you're dealing with the limited number of 'events' talked about but not seen in the OT - The Battle of Taanab (would have to be part of a Lando film) or maybe Rogue One part 2 - The Bothans!

In my mind there's only a couple of potential characters who featured significantly enough in the OT to be considered for spin-off treatment. Firstly would be Wedge Antilles. A spin-off film set after Jedi covering wedge and Rogue Squadron would be good I think. Throw in some of the characters from the literature covering that period i.e. Thrawn, Karrde and you've got potential for something cool.

Secondly, and I'm a bit nervous to raise this, you have Wicket and the Ewoks.... yeah, I know, it would be very much a 'kids' film and they tried it before etc... come to think of it, does that mean the Ewoks film has to be re-assessed now as a potential SW story? I bet the vast majority of SW fans under the age of 30 don't even realise there was an Ewoks film! I was watching Jedi the other day and thought the Ewoks aren't half as annoying as I used to find them.

They can stray from the saga and still be great Star Wars, The Clone Wars is evidence of that. There's no reason why that creativity can't be translated to the big screen with other stories and real life actors.

Thrawn is now is Rebels (as is Wedge), but just mentioning Thrawn as he is now officially part of SW canon.
