Sleight of hand. The note was hidden in his hand, very quick movements fools the eye.

His mistake was asking alesha to hand over the bag. He should have got her to open the bag and then hand over the lemon. But he wanted to play safe. He wanted the lemon in his hand for a longer time. He was unsure if his abilities. So he slips the note through a slit in a rock hard lemon.

Rest is history

As for the 7 pf diamonds. He has about 52 decks of card in his person with a card overturned. Trick is to remember where he has put that deck. The always have a sytem. Hence the large coat.
