How are you actually determining that the MS ipdates are causing your download problems?
Windows store is checking and downloading automatically most of the time and apps like edge will get their updates that way. But the updates are small and should have little effect.
Security, driver, OS and Defender updates are the ones that will come through the update channel and will take the bigger hit.
The changed peer to peer method that MS use now in Windows 10 does have many options.
If your bandwidth is suffering or limited, try looking at Settings>Update and Security>Windows Update>Advanced settings>Choose how updates are delivered
It may be better for you to turn the features there on.

Have found that this really speeds up the delivery of updates on those with limited dl speed by having the option of 'PCs on my local network, and PCs on the internet' turned on.
Would suggest having local pc distribution on as well as internet PCs, this works very well and have been involved in similar distribution methods at enterprise and cloud level, its a well proven method of delivery and the 'bandwidth' reduction is high.
