Can you use V8 juice to make a Gazpacho? if not what tomato juice would be best.

I don't see a problem. It would be quite interesting. I use fresh tomatoes. You could also make Salmorejo.

I don't see why you couldn't use V8 instead of simple tomato juice. It may change the flavour a bit though.

I've never come round to the idea of cold soup. Doesn't seem right somehow.

If it tastes good then it doesn't really matter that it's cold. I like a gazpacho with a savoury ice cream, very refreshing.

Nothing nicer on a hot summers day in Spain than a bowl of great gazpacho - not quite the same on a cold day in July in UK.

A Spanish friend makes Gazpacho. She puts milk in so it is a kind of creamy pink colour.

Having lived in Southern Spain for a long time I make Gazpacho quite a lot in the Summer - it does tend to be more pink than red when the tomatoes are skinned and de-seeded and the bread added.
Tomato juice is fine to add to it if there is not enough liquid from the tomatoes - imo.

Another great soup from down here is Sopa de Ajo Blanco - which is Almond and Garlic soup, again served cold, which is very tasty. We are lucky enough to get the almonds from our trees. Lots of recipes on the net - try the one from Delia Smith.
