In the scene at the Barlows, Robert used two different accents while talking to Ken.
Tracy met and married him when they both lived in London? And he was a carpet fitter?
So how did he metamorphose into a restaurateur in the North West? And why?

She didn't meet him in London, they ran away to London together. That's how the previous incarnation of Tracy left the show.
Then Tracy came back to the show with a new head after shagging his best mate.

I didn't quite catch where this restaurant is supposed to be located?
Sarah Harding saying 'the Gazette' suggests it's in Weatherfield but are we then meant to believe that Robert has been living round the corner for the past 12 years?

Yes, and he divorced her for being unfaithful, though Tracy being Tracy told her family that he had been unfaithful to her.
The storyline is just IMO giving her a story to overhadow that of her mother's death. R.I.P. Deirdre.
I wondered how Robert and Tracy recognised each other when they met again, considering that they'd both gained new heads!

In the same way that michael searched worldwide for his long lost son, and it turned out he lived two or three streets away.
and why would Robert's wife who admitted feeling Tracey was a cloud over their marriage, suddenly move to Weatherfield, the exact place the ex wife comes from?

Super sleuth Emily was the first to spot the man at the funeral was Robert. and conveniently mentioned it to someone to inform us all exactly who he was.
