Is there a way to fake the smoked flavour (as in smoked fish )?

so , I don't have my own smoking shed !

is there something I can marinade / cook fish fillets in to give it a smoked flavour ?

I've been round loads of shops but can't find anything .

Can you purchase a product called Liquid Smoke? It will do what you're after. It's usually found in the spice section in American markets.

Amazon carries it otherwise.

Apparently there is something called 'liquid smoke' thats popular with BBQ enthusiasts - though I doubt you'll find it easily in the UK - should be online though. I think there was a thread in food and drink about home smoking - I think you can buy quite small smoking boxes so you don't need to dedicate a whole shed to smoke your kippers if you really want to "smoke your own"

yes , I've been looking at them on amazon , I'm wondering tho - they look dark in color , I'm assuming they're more for meat , I'd like the yellowy color for fish , are they all just essentially the same ingredient : hickory , do you think?

It's very concentrated. A little tiny dab will do you, so you don't really have to worry about changing the colour. If you *did* want to fake the yellowy colour some fish gets, you could add a bit of turmeric or annatto to your marinade.

Hickory is the default flavour, but other woods are available.

Where do you think they get the flavours from? They're all used in food manufacture, either for humans or for pets.

I hate to be 'that person' - so apologies to everyone! But can't you just hot-smoke the fish yourself? You don't need a smoking shed, or indeed any special equipment at all. I've done it in my wok several times.

Liquid smoke is used a lot in food in the US (where I am). It is interesting stuff, but it definitely soemthing that is easy to overuse. If you put too much it can be nasty. I think they sell different types - Pecan, Apple, Hickory, etc.

Try smoking them yourself.
I have a proper smoker, and smoke huge joints for hours on end
But you can get the same effect with an ordinary BBQ, as long as it has a lid.

Just throw some soaked wood chips on the hot coals and close the lid down.
Best to rake the hot coals into the middle, then lay the fish fillets around the outside so they take longer. Shut the lid, and walk away.
Fish fillets don't take very long to smoke, and you can even do it at the end of the cooking session, using the dregs of the charcoal, then freeze the results for cooking later.
