Christmas Cake

I know it's early, I like to make mine in September early October time though. With all this horrid weather I'm feeling Christmassy

Anyway, I've made the same recipe for a few years now and would like a change, does anyone have a tried and tested recipe they'd like to share?

I havent made one for a couple of years but used Delia's Christmas cake recipe. I picked up a recipe card in Waitrose and tried it and my Dad loved the results!

I used to do a Xmas cake recipe that has been in the family for yonks, then somebody gave me Nigel Slater's recipe. I now use this all the time.
It contains all sorts of wonderful things - dried apricots, figs, cranberries etc and is truly delicious.
However, the cake is rather large - it is for a 10 - 11 inch tin and I cannot find the recipe online.
If you want to make it, do PM me and I will write out the recipe for you.

A few years back we ate our Christmas cake that I'd made a few years before.
It was properly stored and still totally moist when we tried it.

It was well "fed" as they say

I made it around late August and then Christmas Day my son invited us to theirs and they had a cake so I kept it in wraps.
The following year they came to us but my DiL had made and decorated one forgetting we had one - so it stayed in wraps again.
It came out the following (third) Christmas after some nervous prodding and peeking but it was perfect.
From memory it was a Delia recipe.

Does anybody have any Chrismas type of cake I can make that doesn't have fruit in it? My husband doesn't like dried fruit but id like to make something Christmassy for him to enjoy

Not sure about that Sarah, you can do lighter fruit cakes but still fruit and of course they won't keep as well I shouldn't imagine. I'm not a great baker though, I just enjoy doing an annual Christmas cake.
