Rare for me, that applies to lamb, duck and venison too. A nice bit of pork fillet should be pink and juicy too.

I'd never say people were wrong as it's personal opinion but there are a lot of misconceptions about that annoy me. For example people thinking that rare meat has blood in it when it's not blood at all, it's myoglobin. A properly rested steak shouldn't have that anyway. People also still think that pork should be always well done, again, that's not the case.
Plus people that say anything other than well done is a health risk are just wrong.

They eat meat we did used to have vegetarian terrier called Ben, completely his choice though never forced the issue. Not sure why you asked the question though it seems odd thing to ask.

Well I actually asked for it medium as I was lead to believe that would result in a medium rare steak. I still got something virtually raw.

My steak has to be well done - no red at all. I have yet to master the art of cooking it like that without it becoming tough and chewy!

If I could guarantee that it had been cooked to the correct temperature then yes. As a general rule though, without confirmation of temperature then no as obviously chicken can be dangerous.
I would happily try chicken sashimi though if I knew it was correctly prepared.

I grew up in household where meat had to be very, very well done - almost cremated - but over the years I have learned to to have steak medium well done and if it's very good piece of meat then medium - or even, if I'm feeling brave and in a good restaurant, medium rare. I don't think I could touch anything which is rare or blue.

You can sous vide it. Either with the proper kit or wing it using a sealed food bag, a pan of water and a food thermometer.

You cook the steak to the required level/temp. You can then sear it quickly to finish it off.

I also think i've seen it done the other way round. Sear it first then cook it through in the water bath.

Rare for me.


I went for a meal with my ex's family years ago and her Dad asked for his steak to be done well done, it arrived at the table but wasn't well done enough so he sent it back...twice!

It was like a lump of coal when he eventually accepted it, the chef must have been calling him every name under the sun. It was quite an up market restaurant too.

Fatty cuts like rib-eye I like cooked longer, the more lean cuts I prefer blue or raw carpaccio style.
