Hi folks,

I'm looking for a recipe for what I can only describe as Vanilla oatcakes, similar to the Scottish oatcake but sweet instead of savoury.

The shop that makes them won't give us the recipe which is fair enough, I've also looked online and can find very little in regards to vanilla oatcakes although there's plenty of recipes for the savoury ones.

Do you guys know of any recipes?

Oats are cheap. Start with a basic sweet oatcake recipe - leave out any added fruit etc and instead add a drop or two of vanilla essence. Next batch try a little more. Eventually you'll find the ideal mix.

Might be worth trying a little cinnamon or all spice too as they are quite nice in porridge.

I've thought about doing that & it looks like I might have to, I'm just wary of slight changes & ending up with duds but I suppose if I don't try I'll never know.

Thing is even if someone here gives you a recipe - it won't be the one your cakeshop uses. After all 'oatcake' can mean something from a flapjack to a Staffordshire oatcake!
