So I went to the butchers as usual and asked for pork ribs and he suggested buying the poker belly because it had so much more meat on, so as well as ribs I have the skin on pork belly cubes. Does anyone have a good receipt?
Pork belly strips are fantastic marinated in a jerk marinade. I use a recipe similar to this one.
Looks like a lot of ingredients, but you may well have most of them already, and you simply combine everything in a food processor or blender.
I usually grill the strips for about 15 minutes. As yours are diced, might be better to stir-fry them and use the marinade as a sauce.
