It depends. In the beginning it can help to keep people allert and on their toes. Obviously as their experience grows the shouting and rudeness will reduce to a resonable level, just to keep things "simmering" nicely.

Fear has been shown to be one of the less effective ways of getting the best performances out of people. Seems to me that the 'culture' of top kitchens which has grown up encouraging this type of management style is simply a response to the head chefs' lack of ability to manage and motivate their staff into giving their best performances.

I disagree. Chefs have always been like that, for hundreds of years. Probably started on ships where the chef was an important person. They get results.

so because something has "always been like that" it's ok?

if you take that view it would still be acceptable for children to be sent up chimneys, men to work with asbestos without masks and landladies could cheerfully put up signs in their B&Bs which say "No blacks or Irish here".

Culture change is about learning from the mistakes of people who have gone before....I think it's time for a culture change in professional kitchens.
