Ok dont remember if ive posted this on here before(think i just googled) but i thought id put it here just incase anyone else does a google search or a search on this forum for the same issue.
Basically i had the above problem for a while, googled and tried everything bar restoring(for obvious reasons), nothing worked, so today i decided to restore(for more reasons apart from this) i thought id restore and setup as a new phone because its been a while since i did that and also i wanted to revert back to ios 9.0.2 from the 9.1 beta, so i thought it was worth my time in doing it, and i can report back that the restore/set up as new phone has cured this problem of contact names not showing when receiving a text etc. I dont know whether or not a restore from backup/icloud would have still worked as i didnt try that option, so if you go ahead with the backup option it would be interesting to know if the issue was still fixed?
Just glad its sorted, it was only doing it on one contact so it was extremely annoying!
I know this isnt an ideal solution and you shouldnt have to go to these lengths to fix it but it is still a fix none the less.
