Surely in the context of a company you're either a director (registered at Companies House, forms filled in) or you're not? Maybe she;s a director's (or directors') assistent.

Think of it more in terms of the director's second-in-command, rather than an assistant in the 'can you book my flight, get the New York office on the line' sense...

As others have said, it's a totally valid job description. Also, you're assuming it's private sector. Directors in other large organisations are effectively heads of entire [sometimes national] sections (e.g. IT Director, Finance Director, HR Director), have sometimes more than one deputy, and can be responsible for huge numbers of staff and high level strategy. Assistant Directors not PA's or 'executive assistants'.... but they run the show when the director isn't there.

One over thought on Job Titles...

When I was on The Chase, one of the other contestants, like me, had the word 'Manager' at the end of his job title. They try not to have more than one person with similar sounding job titles in the introductions, so they made me come up with something else. It was something like 'International Sales Executive', which sounded a bit wanky but made their introductions flow better.

Another fun fact - They make you take your watch off too, as they get people phone up ITV complaining that it says the wrong time

She's the only Chaser I cannot take to. I just do not find her likeable.

Working for an insurance broking company for many years, I was a Superintendent and my immediate superiors were Assistant Directors.

Me too. But I can't exactly say why.
I find her arrogant at times towards the contestants, maybe this is an act, but it does not do her any favours.
