Duchess Potatoes
I have some ready made carrot and swede mash and I would like to serve it duchess potatoe style . Looking at the 'from scratch ' recipe the only thing not in the mash is egg yolk . Can I just pipe the mash on a baking tray and pop it in the oven for a bit ? Should I brush it with egg yolk? Or is the whole thing just a bad idea.
