how to cook minced beef or steak and kidney
To go with a Sunday dinner. My mum has always done it in water in the oven but I think it loses all flavor and soaks up the water, which other way could it be done, she mixes it with gravy when it's cooked !

They'd require two different lengths of cooking really.
For your mince, fry a finely chopped onion and a couple of garlic cloves till soft, then add your mince and brown adding a little seasoning such as salt and pepper and a bay leaf, and sprinkle over a lttle corn flour, or regular flour, then add a couple of glasses of red wine, and a bullion cube, you can also add extra flavouring to suit your own taste, such as a couple of dashes of Worcester sauce, chilli, paprika etc, or any other herbs such as thyme. Simmer in low with the lid off till it thickens, you may have to add a little more water or flour, it all depends on your own requirements. Steak and kidney is a little different, what I usually do when making steak and kidney pies or pudding filling, is almost exacly the same as above for the mince, but using shin of beef instead, then transfer to an oven dish. I then in a seperate pan brown off some lambs kidneys, transfer them into the oven dish with the beef, then put them in the oven on the lowest setting for a few hours. Both should end up tender, rich and tasty. |

I've never known it to be cooked in water before, as you say, I'd imagine it'd affect the taste. To add, when it's cooked the way I said, it is in gravy. No need to add any afterwards, the wine, meat juices, bullion and flour make the gravy as it's cooking. |
