Must be something to do with the type of contracts/licences they have - stating a pretty strict format for the show. Can't think what else it would be and it's stupid anyway - the contestant are purely separated into groups based on age and gender.
The judges' categories are a fundamental part of the show's format. If you change that, it loses part of its uniqueness, and opens up liability to be sued by other shows.
