Thanks all. Lovely day yesterday. We are having a pause day today though and have deferred Boxing day untl tomorrow when my brother can join us. Mum and I had a walk along the sea front earlier followed by turkey broth and onion bread. The Phil Vickery turkey roasting method delivers delicious broth even before you get to the turkey carcuss stage. So I didn't have to do more than chop up the already cooked veg, add some water to yesterdays left over cookign liquer and heat it up. Doddle - Delicious doddle.

Yes, it says i've asked you for over a year to leave me alone and you haven't and that i've reached the end of my patience with you. It also says you stalk my posts, where ever they may be even hidden away in chatter. Leave me the **** alone go and harass someone else.
Surely this should've been sent in a private message? If you don't want messages from him then surely you can use the ignore funtion? Publicly embarrassing the guy is unnecessary.

With Phil's method https://www.youtube.com/watch?v=p-kMDfPHxJk you not only get a lovely succulent turkey in 2 and a half hours for a 12lb bird, but it is cooked in 2 pints of liquid and veg so you get a delivery of broth on Christmas day. It is wonderful for gravy - just add some thickening and a glug of port. But what you don't need for gravy just goes in the fridge with the vegtables and it goes solid. Once reheated it is perfect for lunch. And you still have a second batch from the carcuss to look forward to in a day or two (or for the freezer)

Well I tried responding in Private Messages for over a year and it had no effect whatsoever. I asked him nicely in November and December 2015 by PM, in fact another poster emailed him and explained to him at that time. I asked him nicely by PM on the 6th September 2016 and the 23rd September 2016, I took the time and went into to detail to explain about my personal issues and even took the time to listen and advise him about his issues and he promised to leave me alone then and again on the 18th November 2016 he was back and again apologised and said he'd leave me alone. Now Christmas Day I get more PMs. During the period i responded privately he would follow me around making posts directed at me. If i ignored those posts other people would question why I was ignoring him. So then i was put in the position where i had to respond.


Please don't tell me how to respond to someone who has been harassing me for over a year. Actually if anyone is embarrassing him it's you, everyone else had moved on and you've brought it back up to everyone's attention, so well done you.
You seem determined to make it an issue now. Who's attention are you trying to draw here?

Does it make the turkey taste like it's been stewed ? that would be my concern!

No it's fantastic. You take the foil off the meat to brown it for 20 minutes or so. He only suggests butter as a glaze but we add honey and mustrad to our butter and then put streaky bacon on top. The wrapping it in a blanket frees the oven for a good hour of really hot cooking time for roasting spuds, pigs in blankets and forcemeat and stiffing balls.

The turkey meat carves beautifuly in neat, fine grained slices, its a succulent as you like and the flavour is magnificent having infused with the liquid containing carrots, onions, leeks, celery, bay leaves and thyme. BTW we don't use the wine that Phil suggests or citrus because it makes the stock bitter. Better to add something like sherry or port to the liquer after the turkey is done.

We just had the Boxing Day repeat of yesterday! Just as delicious on the repeat!
Our turkey is lovely this year very flavoursome!!!

Better in my opinion. Boxing day lunch is the best of the year. Christmas dinner is pretty well a means to an end, you have to have a Christmas dinner to have the left overs for Boxing day.

Do an experiment during the year using Phil's method to cook a chicken. Its completely OTT for a chicken but you will get an idea of how the method works and how nice it is.

Oh i will! A few years ago my mum was ill for christmas day so missed the lovely dinner, i did Christmas dinner at Easter so she didn't miss out.! I might go for a small turkey again this easter. To be honest the above method is quite similar to how i cook a ham! SO i can see how it would work well

We have the crow men who dance through the dale in May and up the dale they have a thing on new year's where the men of the village walk around the village with living fire then take each house in the village a flame for their hearth.

i love these old traditions!!!

Oh we have enjoyed our Christmas, and all quiet weather wise here.
