Whilst I understand he needs to teach these people french cuisine. I think his comment about the dumplings in the guys Jerk chicken was massively off line. Because they were hard he states " this is not right, this is not right, you need to learn" Well I think he needs to learn not to be so ignorant. Jamaican dumplings are almost always hard thats the style of jamaican cooking. you can't just dismiss a whole nations cookery because you don't know about it or understand it. Typical franco-cuisine arrogance. One of the joys of cooking is the multitude of styles. Watch out for michelin men and their food faschism!
