Sparkling Ice Cream
Does anyone know of a way to make sparkling ice cream? I've Googled it and all the suggestions use dry ice which I don't really want to be messing about with.
I love making ice cream and have got a bit of a reputation for making good but unusual ice cream (my last two were coconut and chilli and bacon and maple syrup which everyone loved). I'm wanting to make some for xmas but want to avoid the mince pie, xmas pudding type flavours as I hate them. I was thinking of going down the champagne/prosecco and winter berries kind of route but though it would be good to have it sparkling for a bit of a surprise. Or if anyone has any other xmas flavour suggestions that would be good. |

I suppose a mulled wine sorbet might work? Or spiced cider?

Popping candy to give the "bubbles". They always say champers is hard to get the taste into baked goods and I know with ice cream flavours have to much stronger than usual, I'm surpised no one has come up with a champers type essence.

I meant sparkling as in fizzy rather than sparkly like fairy dust! ![]() |

I wonder if the moisture from the ice cream will set off the popping, it could be tricker than it appears. I have a tesco popping candy that doesn't taste of anything at all, just the popping sensation.
