Mince Pies
Thought Id make some but thought I would
perk up the mix a little The night before I put some raisons in a bowl then added some fortified wine.... let that soak overnight. Then added that to the jar of mincemeat. Results... exellent... well worth the effort... I used full cream fortified British Wine 15% alcohol... Question... will this wine keep ? like a bottle of sherry... or will it start rapidly going off now its open ? Its a screw top . |

It'll go off really quickly so you'll have to drink it all this evening 🍺

Fortified wine will keep as it's alcohol but the flavour will deteriorate, I'd say use within 4 weeks.
As for mince pies top tip add some almond extract when making the pastry gives a lovely flavour that seems popular with most people. |

a bottle of wine will go off within a day or two , why should my ... fortified wine
be any different ? surely it will be turning to vinegar in about a week ? Sherry and Port seem to keep ok for a long time... could that be because of high sugar content ? |
