A few years ago I saw an Italian chef on a tv show - it might have been Antonio Carluccio or Gennaro Contaldo - make a stuffing which included fruit and pine nuts, which was delicious, but I can't find it.
Does anyone have a link please ?

I don't know if this is the kind you had in mind but this is quite a standard Italian stuffing:

Hi Andy,

Was it this Gennaro Contaldo stuffing with pine nuts and raisins?

Found it, she had written it down for me, it is a Carluccio recipe, think it was in Good Food magazine a few years ago, hope this is the one you wanted

150g white bread crumbs
3 tbsp raisins
3 tbsp pine nuts
2 finely chopped cloves of garlic
100g finely grated parmesan
3 tbsp finely chopped parsley
3 med eggs beaten
50g melted butter

Mix everything together, season with salt and pepper, spoon into a loaf tin. Bake for around 30 mins at 190C.
