Naan bread

A while ago, in an Indian restaurant, I had a delicious Naan bread which had an almond paste in the centre.
Can someone tell me what this Naan bread is ?
Is it Peshwari Naan ?
Which supermarket sells it ?

I think most of the peshwari naan stocked by supermarkets are mainly filled with desiccated coconut rather than almond. Do check.

They can be made with a variety of nuts and dried fruit and coconut can be one of the ingredients, the nicest ones have almonds in them.

There's two types of Peshwari from the Tesco range last I checked - when available. The regular range (still very good) but mini naans, or Tesco Finest - a twin pack of large naan bread. They are absolutely lovely - when you can get them,

I buy Naan breads from Asda, and it says Peshwari Naan on the pack, but it tastes nothing like the ones I had in the restaurant

The resturant must have its own recipe for Peshwari naan. I would think coconut is cheaper than almond so its not surprising supermarket ones aren't as nice as the restaurant ones. They aren't terribly hard to make if you fancy trying your own

Supermarket naans are not great. That said, I agree that the Tesco Finest range are probably the best of the bunch. They are round, not the pear shape that most supermarket naans come in.


If you want a nice fluffy naan then you're going to have to get it from a restaurant/takeaway or make it yourself.


I'm not much of a baker but flat breads/pizza bases are pretty easy to knock up.

I've been thinking about making my own flatbreads since having a lovely batch at an Iranian restaurant. They were fantastic (unlike everything else we ate there).

Does anyone have a good recipe? Obviously I know that google exists but a personal recommendation is a good starting point.

Indeedy. My local fine-dining establishment makes them from scratch, unlike a near-by one that takes pitiful pitas out of a plastic bag. Seeing them rise out of the tandoor & then being gently wrapped around a skewer of succulent meat gets the old taste buds flowing

I think the secret to success in making them is having something really hot. And a proper tandoor in the kitchen is.. tricky I guess. I have been tempted to build one outside though. In my attempts, best versions have been cooked on a hot cast-iron griddle, much the same way as making proper muffins. Oven bad, griddle good!

This will depend on your oven but here's what I do.

Crank up main oven to 250c.
Put in cast iron crepe pan. (http://www.degs.co.uk/wordpress/wp-c...3/DSCF1283.jpg)

Leave it for 30 mins or until upto temp.
Just before ready to cook turn the oven setting to oven & grill.

Put the naan on the pan and it should cook in a couple of minutes with a char on the top from the grill.


Also the same method for pizza but leave the grill to just finish off.
