Salmon sandwiches

I love tinned red salmon sandwiches, however I do find them a bit dry.

Is there anything I could mix in with it to make it less dry?

My wife did once mix in some salad cream as you would with tuna but I found it very unpleasant and couldn't eat them.

Mix a little Mayo or cream cheese and touch of lemon juice, black pepper, salt (if needed) and personally I like a little very finely chopped white or spring onions too.

Mayo is your friend

great with salmon or tuna

.......and sliced cucumber

that's got to be close to the perfect sandwich.......

I had some tonight with mayo and lemon juice with some mixed salad leaves.
Much better than with salad cream but I couldn't finish them so not quite there yet.

As a child we always mixed the salmon with a bit of vinegar.

I thought everyone did.

we did when I was a kid.........but then we'd never heard of mayonnaise in the 1950s and 60s

when I just have a tin of salmon in a bowl I have vinegar on

I eat that quite a lot because I always stock up om tinned salmon when it's on special offer............

Or Pesto. I'm a pestoholic. I use that to make tinned tuna more palatable, but would probably overpower the taste of salmon.

What about a bit of a tomato and/or cucumber salsa? Tomatoes would add moisture, and could perk it up a bit with some basic seasoning, or add some finely diced peppers for taste & crunch? Or maybe another of my favorites.. some chopped capers.

Does your wife drain the juices from the salmon, when she removes it from the tin because if so, that is what is making it dry, but as others have said add some vinegar and thinly sliced cucumber, on thin bread.

I always drain the liquid. Is that wrong then?

Only ever vinegar and pepper, mayo does not go with salmon

I always remove the liquid otherwise my bread would be soggy

That's why I remove as much as I can.
Perhaps I will try leaving a small amount.

I mix in a little tartare sauce or vinegar to make the tinned salmon spreadable.

To those that add vinegar, how much are you adding?

same as you would on chips........a good shake

I not only drain the tin of salmon but I also put cold water in a few times and swish it around and empty to get rid of the brine water before taking the salmon out

I don't add vinegar as such, but I do thinly slice pickled onions and mix them with it. Delicious.

mayonnaise don't much like vinegar. How muchmayo depends on your taste. Also some chopped chives add something too. Trouble is don't have them often as it
encourages me to eat too much bread.

Seafood sauce is lovely with salmon or tuna. Sold in jars or you can make your own simply by mixing two parts of mayo to one part of tomato ketchup. It's great man.
