For people who dont like peeling onions
250 grams of mince. Brown in frying pan or saucepan for a few mins.
Add just over 1/4 pint of water. simmer for 10 minutes.
Add a teaspoon of onion sauce mix...stir while adding..
Add a teaspoon of shepards pie mix.............." "
Simmer for 5 mins.
Add 2 teaspoons of Onion gravy mix(or too taste), stir while adding.
If the sauce is too thin, add a bit more gravy mix...to thick..add some more water.
Add a squirt of tomato ketchup (or puree if you don't like the sweetness of ketchup).
Then put in casserole dish add mased potato on top and cook as usual till potatoes are browning.

Serves 2. or 1 if you are really hungry

You can also get peeled and chopped frozen onions in supermarkets, which are handy as you just take what you need

What about peeling the potatoes? Or are you using smash

My lazy recipe:

500g Mince
Diced onion (you can buy this in a packet at most supermarkets)
Secret ingredient
2 tbsp Gravy powder
1 tbsp tomato puree
Salt and pepper (and any other herbs and spices you wish)

And the secret ingredient ... a can of baked beans! It adds the texture of beans, one of your five a day, and the lovely tomato sauce to hold it all together!

My lazy recipe:
Dice an onion and a couple of carrots.
Throw them in a little hot oil and fry till onion is soft.
Throw in 550 grams beef mince and fry till meat is brown
Add the following:
1 tblsp tomato puree
1/4 pint water
1 oxo cube
salt & black pepper
1 tsp celery salt
Cook for a bit and then put in a pie dish and cover in mashed potatoes. Dot the top with a little butter or lard (or brush with oil) and pop under the grill to brown

Am I the only soul in the world who simmers their mince for Shepherd's Pie?

For me there's no lazy way to cook shepherd or cottage pie, it always takes a couple of hours at least

I simmer my mince for 2 to 3 hours.

Same here, the prep doesn't take that long though and you can do other things while it is cooking. Just needs a bit of planning and not a dish to do if you are short of time.

Not at all.
Plus a splash of red wine, Worcestershire sauce, dollop of Tom purée, finely diced carrot and celery with the onions at the outset.
Let it simmer gently for as long as you can spare.
Let it cool then, preferably the next day, apply the mash, a sprinkle of grated cheese then in the oven until it gets a baked top.
😛

Or, if you have a "busy lifestyle" use the OP's method and bang Smash on top (or Yeoman)

But it freezes brilliantly, so never make just one at a time, make double and freeze one.

Carrot, celery onion (fresh!) as the base, then add meat, wine, worcestershire sauce etc and the mashed potatoes. No other way. Skimping with the ingredients means you end up with something more like a pot noodle (or rather it's erstwhile demonic companion, the pot mash) than a proper shepherd's pie.

I assume it's one of the packs of powdered shepherds pie mixes you can buy. I doubt you'd be able to taste a teaspoon of it in that mix though.

Some of those mixes are just baffling to me. Shepherd's pie mix? Lasagne mix? What is in them and why would you want to use them?

Potatoes don't need to be peeled. Boiling them whole causes them to make their skins easier to remove or with the skins on adds a rustic feel to the mash.

Sweet potatoes react in the same way. Celeriac too.
