Going to post on here to subscribe to this thread for some good ideas as to finding easy, healthy and original recipes.

Tonight I made a beef stroganoff for the first time. Diced beef (fried in butter and well seasoned); chopped onion and shallots; some sour cream, mustard and a dash of honey plus Worcestershire sauce. Serve with tagliatelle and veg. Oh my god, I was so proud - it was divine!
Sounds very nice!
Yet again, more of a massive pie I made that includes Quorn chunks, potatoes, broad beans, broccoli, leeks, onions, peas and mushrooms, with a light sprinking of chopped garlic. I cheated by using shop-bought puff pastry and a white mushroom sauce intended for use with chicken, but which contains no animal ingredients. I made it to last several days, but it's bigger than I thought and I'm eating it for every meal.
Yum! Right down my street!

Today is dahl (never know how to spell it!), with mushrooms in it, and garlic bread.
