The time given for each challenge is entirely down to the production team. Part of the point of the competition is to be able to work under time pressure. Sometimes they do misjudge it (the final wedding cake challenge a few years ago does spring to mind) but it's part of the deal.

I do find Val very irritating but I agree with her about not making filo pastry, why would anybody want to make it when the ready made is just as good, or in my case probably better as I've never made filo in my life.
