It is ridiculous they do not get time for the cakes to cool.

There should be a timeframe for completion of the cooking time. Then everyone must stop.
Then another timeframe for decoration / filling etc.
How can you make icing work on a hot bake??
All of the bakes can be done in the allotted timeframe. A team of people do the challenges, when the show is being prepared, to ensure this is possible

The BBC aren't directing it, nor are they producing it (as recent events have emphasised). How long they get is nothing to do with anyone at the Beeb. The time given for each challenge is entirely down to the production team. Part of the point of the competition is to be able to work under time pressure. Sometimes they do misjudge it (the final wedding cake challenge a few years ago does spring to mind) but it's part of the deal.
Yes, forgot it's Love Productions isn't it? The ones all the controversy is about.

It is a case of understanding what you are doing, planning the most appropriate order given the time allowed, making a plan, and not making silly mistakes. All of the bakes are 'do-able' in the time allowed

All their icings seemed runny to me, even the best.

I do find Val very irritating but I agree with her about not making filo pastry, why would anybody want to make it when the ready made is just as good, or in my case probably better as I've never made filo in my life.
