Eccles cake recipe
Hi,
Does anyone have a tried and tested Eccles cake recipe. I'll use shop bought puff pastry, around 375g, so it's just the amounts, filling, temperature and timings please. Many thanks |

Make a thick paste with:
1oz butter 1/2oz flour 1 tablespoon lemon juice (don't worry if it looks like it's curdling) then add: 4oz currants 1/2oz peel 2oz brown sugar mix it all up, then beat an egg and add that last. mix thoroughly form your cakes with your flaky pastry, and bake on gas7 for 35-40mins |

Eccles cakes
Lay out your puff pastry, cut into rounds or squares, melt some butter, add what fruit you prefer, currants, saltanas, or mixed fruit, add sugar, let it cool, put on top of pastry, fold and seal underneath, flatten top, Gentley slash top once or twice, brush with milk or eggwhite, sprinkle with sugar. Cook. Elec about 200d, 15-20 mins.ish
