Will there be a noticeable difference the optical output on the chromecast rather than RCA, particularly with high quality streams/files?

All depends on what you are listening to and the capabilities of your audio system.

A decent HiFi audio system with digital to analogue conversion capability may well do a better job than the Chromecast's built in converter. And if the source is a surround format and you have a surround audio system then the digital out will be preferable.

But some cheap stereo system you lifted off the shelf at Currys I doubt you'd notice the difference.
