Susan Boyle sung her audition song for the final. I think there have been others, although I haven't bothered watching the auditions for years so can't name any.

I don't think it's a rule as such, but if you're performing your own material - impressionists, magicians, dance acts, etc - the audience is expecting to see something they haven't seen before. Whereas if you're a singer the audience isn't expecting you to sing something they've never heard before - entirely the opposite. So some singers repeat the song that got them to the final because they think it's what the public want to hear.
I also think that the producers encourage them to sing their audition songs, especially if it was a hit. I'm sure that many people who watch the final haven't seen any of the auditions or semis.

Edit: Rewatching, I noticed how gutted Beau's dad and brother were when Richard Jones was announced as the winner. Richard's parents were behind them in the audience.

All professional music is staged. They don't ad lib
Talented people don't sound staged, though. They make what they're singing sound natural. Beau has potential, but she has a lot to learn about performing. At the moment, she's copying every facial expression and mannerism from videos of other performers instead of performing from the heart. She also has an affected way of singing, which seems OTT and put on. She needs to smile more and learn to relax.

Jasmine may not have the training that Beau has, but she has a natural singing style, and she sings from the heart.
