Nice! In case you ever find yourself in Sydney I recommend you visit Archie Rose. it's the city's first ever independent distillery in over a century and a half. They serve excellent tailored spirits and the people are fantastic. Definitely a stop you need to make, I doubt you’ll be disappointed.

By the way. I liked the Which Wine with Which Cheese article and your brief bio of Gordon Ramsay's career. He’s definitely one of my favourite chefs. (He fillets a fish like it’s butter, come on!)
